Elora Distilling Company Overview
The Elora Distilling Company is an award-winning craft distillery located in the heart of downtown Elora, Ontario. Since opening in 2020, we’ve proudly created over 40 grain to glass small-batch spirits, using locally grown ingredients from farms in Wellington and Waterloo counties. Every bottle is carefully filled and hand-labeled in-house, through an intentional process from start to finish. We collaborate with nearby growers to time our limited-release seasonal blends, hand forage from the wild, and harvest from our own herb and botanical garden to give our spirits their signature character.
From exceptional gins, vodkas, whiskeys, and rum, to unique and flavourful liqueurs, Elora Distilling Company offers a range of spirits designed to elevate your cocktails and spark creativity.
We also offer more than just what’s in the bottle. Our event spaces reflect the charm of Elora, styled with curated decor inspired by classic cocktail lounges and timeless hotel lobby bars. Perfect for gathering with friends, celebrating with family, or coming together with coworkers, we are happy to welcome you into our Royal Room Cocktail Lounge, Juniper Patio, or King George Bar for groups of 20 to 80 guests. We also host tours that walk guests through the distilling process with a full tasting of our spirits, lead engaging cocktail classes that teach people how to mix and appreciate what they make, and plan special events that invite the community to enjoy a cocktail in our lively spaces.

Signature Cocktail: The Dalby

Ingredients
- 1 oz Great Expectations Gin
- 1/2 oz Elora Distilling Company Crème de Cassis
- 1/2 oz Elora Distilling Company Triple Sec
- 1/2 oz lemon juice
- lemon slice or zest for garnish
Directions
Pour all ingredients except garnish into a cocktail shaker filled with ice. Shake for at least 30 seconds, until well chilled.
Serve in a coupe glass with a slice of lemon or a lemon zest curl.

Great Expectations Ontario Terroir Gin
Made with botanicals foraged within a few minutes of the distillery, this is a true Wellington County craft gin. This herbal gin is made with juniper, sumac, sweet gale, and burdock, all distilled separately, and then blended to create this Gold medal winning gin.

Juniperus Maximus Gin
As the name suggests, this is a juniper forward gin; a gin as it was meant to be. Juniper, lime, and lemon, are all macerated in neutral grain spirit before being distilled with more juniper. lime, lemon, and angelica root. This juniper and citrus heavy gin makes a great martini, or gin and tonic.

Amethyst Spirit
This a unique spirit made with vodka, before being filtered through a custom-built filter that filters the vodka through 4 feet of Ontario Amethyst, followed by 8 feet of activated carbon. This vodka style spirit tastes like nothing else.

Elemental Vodka
Made from locally sourced wheat from Wellington County, you won't find a vodka that more authentically represents the region. Triple distilled, and triple filtered. This is an ultra smooth, drinkable vodka.

Royal Amber Whiskey
Our whiskey is made from 100% local grains; primarily rye with a blend of corn and wheat to soften the rye character. This is a spicy complex whiskey with notes of caramel, and vanilla. Double distilled, before being aged in #3 char barrels for a minimum of 3 years.

Ontario Black Spiced Rum
This is a flavourful rum that benefits from a blend of three distillations before being aged in #3 char new oak barrels for a minimum of 1 year. Vanilla, cinnamon, and nutmeg are macerated, and added to the rum to give it it's signature warming spice bouquet. This is a dark, smooth rum with hints of vanilla and warming spices.

Cassis
Make a fantastic Kir Royal with this local take on the French Creme de Cassis. We use our own vodka as the base spirit and add black current concentrate from locally grown currants, to create this sweet and fruity, but slightly tart spirit.
ABV: 15%

Limoncello
Hand-zested lemons give this Limoncello a well-balanced, smooth and natural citrus flavour. A wonderful addition to your cocktails.

Café Noir
Café Noir is our own house made espresso liqueur. This liqueur is made from freshly brewed espresso combined with premium liqueur resulting in a rich, premium liqueur with bold espresso flavour. A great addition to an Espresso Martini, a White Russian, or you can sip it on it's own over ice.
