Sitting on the banks of the Speed River in Guelph, Ontario, Spring Mill Distillery is draped in history and rooted in tradition. Since it's conception over a decade ago, our mission has always been to deliver the highest quality Canadian spirits. Our conviction to offer premium spirits starts with the choicest Canadian grains and a selection of renowned equipment from the finest makers world-wide. Produced using time-honoured techniques true to traditional practices, each batch of spirit is carefully tended to from grain-to-glass.

We host, and participate in a number of events throughout the year including A Taste of Glynhurst, the United Way Ultimate Burger Battle, Father's Day Whisky and BBQ Tour, and more.
We can also host you for your own private event in the Cooperage Room, including baby showers, bridal showers, corporate events, weddings and more.
Signature Cocktail: The Dellemere
Ingredients
- 2 oz John Sleeman & Sons Vodka or Gin
- 1 oz lemon juice
- 1.5 oz honey simple
- 3 sprigs mint plus additional for garnish
Directions
- Combine all ingredients and shake vigorously with ice
- Strain into a chilled cocktail glass
- Garnish with mint & enjoy

High Rye Straight Whisky
Vanilla, tropical fruit, and a hint of smoke make for a delicious pour. Canadian rye grains create a rich, spicy rye.
Mash bill: 51% corn, 34% rye, 15% barley
Aged in: Virgin American oak
Nose: New York cheesecake, toasted marshmallow
Palate: baking spice, caramel, dried fruit, tobacco
Finish: long, warming, lingering spice, oak
ABV: 48%
Size: 750ml
Rye Whisky
A classic Canadian Rye.
Mash bill: corn, rye
Aged In: Virgin Canadian Oak and ex-bourbon casks
Nose: sweet vanilla, hints of orange marmalade
Palate: ripe pear, fresh cracked pepper
Finish: long, cinnamon, toasted crème brûlée
ABV: 40%
Size: 750ml
The Cooper's Rye Whisky
100% rye grain aged in Canadian oak barrels made on site by our in-house cooper
Mash bill: 100% rye
Aged in: Virgin Canadian oak
Nose: worn leather, hints of stone fruit
Palate: tart cherry, blackberry, oak, baking spice
Finish: medium, toasted almond
ABV: 48%

Single Malt Whisky
A Canadian single malt made with 100% Canadian barley, produced using Scottish-made equipment.
Mash bill: malted barley
Aged In: ex-bourbon casks
Nose: butterscotch, soft malt, dried fruit
Palate: malt, poached pear, creamsicle
Finish: floral, fresh linen, honey
ABV: 40%

Sherry Finished Single Malt Whisky
Our Canadian single malt whisky is aged in ex-bourbon casks before being finished in Pedro Ximenez and Oloroso Sherry Casks.

Nose: green apple, chocolate, fresh leather
Palate: fruitcake, dark chocolate, toffee

A balanced and approachable Irish style whisky.
Mash bill: barley, malted barley, wheat, corn
Aged In: ex-bourbon casks
Nose: light, floral, bright citrus
Palate: soft, bubblegum, cereal sweetness
Finish: clean, vanilla, subtle spice
ABV: 40%

An elegant wheat vodka with a subtle sweetness and a hint of citrus. Perfect on its own, or in your favourite cocktail.

Ginger and Lime Mule
Our ginger and lime mule is a crisp, highly refreshing RTD cocktail with a perfect balance of spicy, zesty, and subtly sweet flavors. The zesty lime cuts through the fiery bite of the ginger, while the vodka provides a clean, smooth finish.
