Where tequila's made, the Spanish influence, requirements and standards, and how tequila has changed over the years to become the spirit we know and love today.
Tequila is an agave spirit, and a sub-category of mezcal, made exclusively in Mexico. The production of tequila is regulated by Mexican law, which stipulates a number of requirements for an agave spirit to be called tequila. Two of the most notable ones are:
- Tequila can only be produced in certain regions of Mexico, primarily in the state of Jalisco
- Unlike mezcal, tequila must be made from at least 51% Blue Weber Agave plant distillate
