Happy National Tequila Day! So many cocktails, but this one is da bomb!

It is the perfect marriage between the classic Margarita and classic Mojito! Yes please! It is light and refreshing and goes down a little too quickly!  Cut back on the tequila if you tend to be a drinker rather than a sipper. Guilty as charged!

It is a refreshing blend of fresh mint, tequila, lime juice and soda water. A little sugar is thrown in for sweetness to balance the lime.

Fresh Mint – easily found in grocery stores, but find a friend who has a plant of this perennial goodness and root some clippings. Plant it and voila, mint fresh mint for years to come. Spearmint or Mojito Mint is best. Gardeners will warn you that mint spreads like crazy, so I suggest planting in a contained area or in a large planter. I have one that has a few run away perennial herbs like oregano. Close to the house and handy for cocktails and recipes too! Summer really is awesome!

Tequila – Silver gives a lighter look to the drink. Choose a moderately priced tequila versus a more expensive sipping tequila.

Sugar – white granulated sugar is all that is needed. The grit of the sugar helps to muddles the mint leaves.

Lime Juice – fresh is always best. Get a good citrus juicer and you will not regret it. However, do not decide to not enjoy the beverage if all you have is a bottle of lime juice in the fridge.

Soda water – choose whatever brand you have available. A soda stream can also be used.

Rimming sugar/salt – you can purchase ready-made rimming sugar. For this version, I used a mix of equal parts sugar and salt. They both go well with tequila!

Ingredients

1⁄2 c fresh mint (torn into pieces)
2 1⁄2 oz lime juice
1 T sugar
4 oz silver tequila (or 2 ounces tequila and 2 ounces water if you want a lighter drink)
  soda water
  slice lime for garnish
  salt and sugar to rim glasses

Directions

Put mint leaves and sugar in cocktail mixer

Muddle so that the mint releases it fragrant and flavorful oils

Add the tequila and lime and muddle a bit more

Add a handful of ice

Shake - shake - shake! Maybe do a little dance for your friends or partner. This gets more lively the more cocktails you have!

Mix the sugar and salt and pour onto a small plate

Run a wedge of lime around two glasses and rim with the sugar and salt blend

Pour the Mojitarita into the two glasses and garnish with a lime wheel
