Taco Tuesday you say? A great shrimp taco needs a great coleslaw. A cold cerveza or maybe a Margarita as an extra perk. Maybe you just want to dream of a Mexican vacation in the midst of the work week.
Adding Margarita Coleslaw to your tacos will give that extra zip of sunshine! Wonderful in conjunction with BBQ Tequila Lime Shrimp, similar flavors meld together seamlessly.
Cabbage: This dressing can be tossed with a bagged shredded cabbage form the grocery store. Or you can make your own with shredded cabbage, grated carrot and sliced green onion, red onion or shallot, whatever you prefer or have in your pantry or fridge.
Mayonnaise: This dressing is mayonnaise based. Any mayo will do, although I prefer to use an olive oil or avocado based mayo for added healthy oils. Sometimes I half the mayo with sour cream or yogurt to lighten up the slaw.
Lime: As with most Mexican foods, lime is the natural acid accompaniment. This recipe takes the juice of one healthy lime. Fresh is best, but a quality organic lime juice also works nicely.
Salt, Pepper, and Sugar: A touch of salt, pepper and sugar round out the basic ingredients of the dressing. Although those trying to avoid white sugar can easily substitute some honey.
Cilantro: Cilantro is a common additional in Mexican food. However, some love it and some think it tastes like soap! You can add it, or substitute for parsley or skip it altogether.
Tortillas: Another controversial taco conversation is corn or flour tortillas. Many purists will say it must be corn tortillas. In our house, we prefer flour tortillas and often use smaller 3 – 4 inch soft flour tortillas. Use whatever your family prefers.
It Wouldn't be Margarita Coleslaw Without Tequila: Finally the Margarita-making ingredient of this zesty coleslaw dressing…tequila. It does not take much to give this coleslaw a little extra flavor. Use a basic tequila versus a more expensive sipping tequila. If you are enjoying a Margarita with your tacos, you can use the same one!
This coleslaw is usually best if it is allowed to marinade for at least an hour so that the flavors get a chance to fully mix.
Great for Taco Tuesday, or Anytime
As mentioned, we are using this coleslaw for Taco Tuesday. Combine this Margarita Coleslaw recipe with Barbecue Tequila Lime Shrimp to make outstanding shrimp tacos.
Add either a fresh tomato or mango salsa to brighten them up. The addition of mango really elevates the flavors of shrimp tacos. If I do not feel like making the mango into a salsa, we will just sliced mango right to the taco. Another must have addition is either guacamole or sliced avocado. We also like the addition of a Cilantro Lime Crema or sour cream on our tacos. Tacos can be made many ways, with many different toppings.
How to Make Margarita Coleslaw
Ingredients
Directions
For the dressing whisk together:
- mayo
- lime juice
- cilantro
- honey
- sugar
- salt
- pepper
- onion
in small bowl or measuring cup
Shred cabbage and carrot into salad bowl or use ready-made bag of coleslaw mix
Add dressing to cabbage mix and toss to coat
Cover and put in fridge for at least an hour
Notes
Enjoy on tacos or pulled pork! Looks nice garnished with lime wheels.
