Pineapple Margarita

This variation on the classic margarita replaces most of the lime juice with pineapple juice, to create a refreshing cocktail that transports you to a tropical beach.

Pineapple margaritas are perfect for girl’s night. I recently served these at our regular book club and they were a hit! I renamed it to theme of our thriller book and called it the ‘Pineapple Punisher!' They are fresh, fruity, and very smooth.  If you (or any lady friend you might be making this for) is a fan of Sweet Magnolias on Netflix, you will know that Margarita Night with the ladies is a great idea!

I have not made this as a pitcher, but it might be an idea for another day. I tend to give a choice of cocktails, but this one was so popular I think it is worthy of a solo show! Pick up a fresh pineapple, head to the liquor store, if needed, and make some Pineapple margaritas this weekend.

Pineapple Margarita Ingredients

The first ingredient is tequila. I do not recommend your top shelf sipping tequila. A silver, or clear tequila works best.

The second alcohol is Triple Sec. However, in my area Triple Sec is back ordered, I guess everyone is watching Sweet Magnolias! Natural substitutions are Cointreau (which is lovely) or Gran Marnier. All are orange liqueurs.

Next you need lime juice, you can juice a fresh lime, which is always best. If you have a crowd, I would squeeze several ahead of time or buy a good quality organic lime juice form the grocery store. I always keep Farm Boy Lime Juice organic lime juice in the fridge.

Finally, the starring flavor is pineapple juice. I suppose you could juice a fresh pineapple and that would be amazing and I would like to come to your house!  I do not have a juicer and I could only find pineapple juice form concentrate. It was still delicious.

How to Make a Pineapple Margarita

Ingredients

1 1⁄2 oz silver tequila
3⁄4 oz Triple Sec or Cointreau
3⁄4 oz lime juice (about half a lime)
3 oz pineapple juice
  sugar (for rimming glass)
  pineapple (for garnish)

Directions

Pour the sugar onto a small plate

Rim a margarita glass by rubbing a piece of pineapple around the rim and then dipping into the sugar. Choose a less ‘tippy’ glass if desired. Pineapple margaritas can be sticky if they slosh over the side of a tipsy glass.

Add ice to a cocktail shaker

Add all ingredients to shaker and shake until cold

Strain in glass and add pineapple chunk as garnish

Enjoy! Bet you can’t drink just one!
